Outdoor cooking experiences with Chef Darren Broom

Join us yourself, or give a friend an immersive cooking experience hosted by chef Darren Broom. Learn the art of butchery and live fire cooking from an outstanding professional chef, pick and cook your own ingredients from the garden and enjoy a superb lunch in the restaurant.

 

ITINERARY

  • Arrive for tea, coffee & pastries in the courtyard

  • Garden walk & harvest with Darren and Head Gardener, James

  • Build and light a fire in the orchard fire pit

  • Old Herdwick Lamb break down with Darren
    (Smaller cuts butchered and cooked by guests, remainder cut up & wrapped to take home)

  • Vegetable workshop including:
    - Clay baked onions
    - Ember baked squashes
    - Brined & grilled carrots
    - Rolled chard

  • Make a garden ketchup to take home

  • Three-course lunch in the restaurant


 
 
 

THE DAY IN DETAIL

Darren will greet you with coffee & homemade pastries in the courtyard before taking you on a guided walk around the garden with Head Gardener, James Rolleston. You’ll gather your ingredients to cook, including herbs, vegetables & the last of the orchard fruits.

Your kitchen for the day is the barn located in the orchard, a central fire pit as the stove and a large farmhouse table to gather around, warmed by the log burner.
~
After building your fire & learning the fundamentals, you’ll place your humble vegetables in the embers to slowly cook. Then, turning your hands to a spot of butchery, a locally-reared Old Herdwick lamb awaits you.
~
Darren will demonstrate how to butcher the lamb into its various cuts before dividing you into groups where you can butcher small joints, preparing them to be cooked over the fire.

With the orchard fruits, you’ll make a delicious ketchup to accompany the pork and bottle it to take home.
~
Now the vegetables have slowly cooked in the heat of the embers, the fire will be ready for your cuts of lamb. We’ll make a herb salt to season the meat as it rests.
~
Now you can enjoy the fruits of your labour around the farmhouse table!
~
We will take care of the tidying up as you head on up to the restaurant for a three-course lunch with a Sprigster Drinks pairing.
~
After lunch, Darren will bring over your goodie bags filled with your ketchup, herb salt, vegetables & cuts of lamb from your day’s butchery.

Orchard Fire with Chef Darren Broom runs on selected weekdays throughout spring/summer.
